Role Summary

As the Assistant Manager at Kyatcha Rotterdam, you will be the right hand of the General Manager and a key leader on the restaurant floor. This is a highly visible, hands-on role in which you set the tone for service each day, ensuring every guest enjoys a world-class dining experience. You will maintain an active floor presence – greeting guests, solving issues, and guiding the team in real time to uphold our fine dining standards. By leading by example, you’ll foster a culture of professionalism, warmth, and impeccable hospitality.

Beyond the day-to-day operations, you will also take on a strategic role in driving Kyatcha’s success. The Assistant Manager works closely with the General Manager to brainstorm and implement ideas that elevate the guest experience and increase average guest spend. You will monitor business performance, identify opportunities to improve service or sales, and help execute initiatives to grow revenue. This position comes with significant growth potential: for the right candidate who excels in the role, there is a clear pathway to advance into a future General Manager position.

Key Responsibilities

  • Leadership on the Floor: Serve as a visible leader during service, actively engaging with guests and employees to ensure an exceptional dining experience at all times. Act as the primary point of contact for guest inquiries, special requests, or issues, and handle these with professionalism and warmth.
  • Real-Time Staff Supervision: Oversee and coordinate the front-of-house team in real time. Monitor staff performance against our documented service standards, providing immediate feedback and hands-on correction or support when you observe areas for improvement. Ensure that service flows smoothly and standards are consistently met throughout each shift.
  • Coaching & Team Development: Train, mentor, and develop restaurant staff to maintain a consistently high level of service. Organize pre-shift briefings, share menu knowledge (food and beverage), and instill guest-focused service habits in the team. Foster a positive environment built on teamwork, continuous learning, and mutual respect.
  • Quality & Service Excellence: Uphold and enforce Kyatcha’s standards of quality in all areas of the guest experience. Ensure that everything from table settings and timing of courses to staff appearance and interaction is in line with a fine dining establishment. Promptly address any service snags or guest complaints, turning challenges into opportunities to impress.
  • Strategic Guest Experience Enhancement: Work with management to introduce ideas that delight guests and encourage higher engagement and spending. This could include refining upselling techniques, curating special menu experiences, coordinating events, or other creative initiatives to elevate the overall guest experience and increase the average spend per guest.
  • Business Support & Operations: Assist the General Manager in operational and administrative tasks that keep the restaurant running efficiently. This includes scheduling and staffing, inventory oversight, and ensuring compliance with health, safety, and hygiene regulations. Use your business acumen to help analyze sales and service metrics, contributing to decisions that improve revenue and profitability.
  • Revenue Growth & Innovation: Take an active role in executing strategies to grow the business – for example, supporting marketing promotions, loyalty programs, or partnerships. Consistently look for on-the-ground insights (like guest feedback or dining trends) and share these with the management team to help refine our offerings and drive repeat business.
  • Acting-in-Charge & Continuous Improvement: Step into the General Manager’s responsibilities when they are off-site or during your duty shifts. Ensure continuity of leadership and that high standards are maintained at all times. Demonstrate initiative by continuously seeking ways to improve operations and guest satisfaction. By taking on additional responsibility and excelling in your role, you will effectively pave the way for your own growth into a future General Manager position.

What We’re Looking For

  • Experience & Maturity: At least 3 years of leadership experience in high-end restaurants, preferably in fine dining or Japanese cuisine. Candidates must be 25 years or older, bringing a mature, proactive, and professional demeanor to the role.
  • People Management Skills: A proven ability to manage, coach, and inspire a diverse service team. You can train staff in service excellence, communicate expectations clearly, and foster a positive team spirit even in a fast-paced environment.
  • Guest-Focused Communication: Excellent communication and interpersonal skills. You are confident and courteous in engaging with guests, adept at handling feedback or complaints, and able to guide the team with clear instructions. Fluent English is required (Dutch language skills are a plus).
  • Hands-On & Solution-Oriented: A leader who leads by example and isn’t afraid to roll up their sleeves. You stay calm under pressure and are quick to troubleshoot issues on the spot, always looking for effective solutions that keep service on track.
  • Commercial Acumen: Commercially driven mindset with an understanding of how great hospitality and business results go hand-in-hand. You have experience with techniques to drive sales (e.g. upselling, promotions) and can interpret basic restaurant performance metrics. An ability to think strategically about improving guest spend and loyalty is important.
  • Professional & Technically Savvy: Strong organizational skills and reliability. Comfortable with the administrative side of management – from using point-of-sale and reservation systems to basic MS Office or scheduling tools – to ensure smooth operations. (Having familiarity with inventory management and cost control is a plus.)
