We are currently looking for a Customer Dedicated Sous Chef to join our culinary team. The Dedicated Sous Chef supports the oversight and culinary delivery for all customer flights. To this end, the incumbent will be responsible for the implementation, production, training, delivery, and execution of culinary initiatives, including process standardization, compliance and product quality and consistency. The incumbent will also be expected to demonstrate a strong aptitude for effective planning, direction, control, and resource management. The Customer Dedicated Sous chef acts as the lead chef in the absence of the Executive Chef Operations and Customer Dedicated Executive Chef.

Main Duties and Responsibilities:

  • Supports the Executive Chef Operations and Dedicated Executive Chef in delivering customer expectations, business objectives, and targets to optimize company resources and leads the execution of defined culinary operational objectives and standards.
  • In the absence of the Executive Chef Operations and Dedicated Executive Chef as the culinary lead for the unit.
  • Acts in support of the Executive Chef Operations and Dedicated Executive Chef to drive menu and product quality in all production areas by overseeing food preparation and production, by consulting with the chefs, cooks, and team leaders to minimize waste through portioning, over portioning, over-production, and inventory control.
  • Ensures production is properly planned and set up and specifications are reviewed to ensure compliance with recipes and portion specifications as required by the customer.
  • Understand menu and product specifications and ensure employee menu training is completed.
  • Achieves culinary operational objectives by contributing information and analysis to strategic plans and reviews; preparing and completing action plans; implementing production, productivity, quality, and customer-service standards; serving as culinary resource support to Executive Chef Operations & DL Dedicated Executive Chef and operations management.
  • Trains employees on general culinary terminology, cooking techniques and procedures, grades and cuts of meat, poultry and seafood, grades of fruit and produce and their proper measurement.
  • Provide regular customer and team reports as required by the operational management.
  • Maintains a safe, secure, and healthy work environment by establishing and enforcing Gategroup standards and procedures.
  • Ensures adherence to HACCP and regional safety regulations in compliance with Gategroup policies and procedures.

Who are we looking for?

We are seeking an experienced professional with at least 7 years in Chef roles, including 1–3 years of supervisory experience in high-volume environments like food production, catering, or restaurants. Expertise in menu design and planning (2–5 years) is essential, and in-flight catering experience is a plus. The ideal candidate excels in team management, lean management, and is a proactive innovative leader. Strong English communication skills (written and verbal), presentation abilities, and interpersonal skills are key. Proficiency in managing KPIs, financial budgeting, and IT, combined with a customer-focused approach, rounds out this role.
